1 package spice cake mix
1 cup canned pumpkin
3 eggs
1/3 cup oil
1/4 cup water
1/2 teaspoon each of the following: ground
nutmeg, ground cinnamon, ground ginger, allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, raisins, or both

Combine all the ingredients except the nuts in a bowl. Beat on low for
1 minute. Turn mixer to medium, beat for 2 minutes. Fold in nuts. Fill
lined cupcake pans 1/2 full. Bake in a 350 degree oven for 20 minutes
or until a toothpick inserted into the center of the cupcakes comes out
clean. Cool.
Inject and Frost with Pumpkin Cream Cheese Frosting
4 ounces cream cheese, softened
1/4 cup butter, softened
2 cups confectioners' sugar
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 cup canned pumpkin
1 Tablespoon milk
Beat all the ingredients until smooth. Fill 2 bellows with the filling.
Inject into the center of each cupcake. Frost the cupcakes with remaining
frosting. Garnish with additional chopped nuts.
