Holiday Turkey with Citrus Marinade

Serves: 6 - 8
Ingredients:

1 12 to 15 pound turkey, thawed
1 teaspoon orange rind, finely grated
3/4 cup orange juice
1/2 cup grapefruit juice
1 teaspoon lime rind, finely grated
2 Tablespoons lime juice
2 Tablespoons olive oil
2 Tablespoons honey
1 Tablespoon rosemary, very finely minced
1 teaspoon Dijon mustard
Salt and lemon pepper, to taste

Directions:
Wash and dry the turkey. Dry it well with paper toweling. Combine the marinade ingredients in a bowl with pour spout. Pour into the Flavor Express(r) bellows. With the turkey in an open roasting pan, inject the turkey using the large needle. Place most of the marinade into the breasts to keep them moist during roasting. Refrigerate for about 30 minutes. Preheat the oven to 325 degrees and remove the turkey from the refrigerator. Bring it to room temperature before roasting. Pour off any drippings from the pan and reserve them in a saucepan. Reduce the marinade in half by boiling. Reserve and cool to enrich any sauce or gravy desired. Roast the turkey, uncovered, breast side up for 15 - 20 per pound or until a slice from the leg is no longer pink. If desired, you may baste the turkey with the reduced marinade for color and enriched flavor. Cool at least 20 minutes before carving.
Hints:
This marinade may be made ahead and stored in the refrigerator before using. Keep it tightly sealed in a glass jar until it is time to use it.
